Sweet Bread with Coconut Filling is a delicious bread you can make and have with breakfast or as a snack through out the day.
The recipe includes
2 cups of sugar
2 1/2 cups of coconut
1/2 cup water
1/2 evaporated milk
2 eggs
1/2 cup raisins
1/2 cup mix fruits
1/2 cup cherries
1/2 cup coconut oil
6 cups flour
2 tbs baking powder
1 cup butter
1 tsp vanilla extract
1/2 tsp almond extract
1/2 tsp salt
1 tsp nutmeg
1 tsp allspice or cinnamon

Add flour and baking powder together and set aside
combine all other ingredients together and mix well
Start by adding 1 cup of flour to mixture, continue adding and combining flour with mixture, when mixture starts to move away from side of bowl, put onto kneading board and knead.

Mix your center coconut by
Adding 1/2 cup of coconut
1/2 cup of sugar
1/2 tsp vanilla extract
1/4 tsp almond extract
1/2 tsp nutmeg
1/2 tsp cinnamon
Mix together well

Divide bread in 3 parts, in center of bread add coconut mixture, roll like a log and place in greased pan.
Place bread in heated oven at 350 degrees for 45 mins,
Remove bread from oven and test, if fork comes out clean bread is done.
brush sugar water on bread for a golden crust and place back in over for another 5 mins
remove let stand to cool and serve with hot tea, coffee or Milo
