3 tbsp Light soy sauce
2 tbsp Shaoxing wine
1 tbsp Water
1 tbsp White sugar
2 inch knob Ginger (julienne)
3 cloves Garlic (chopped)
Scallions (julienne)
1 tbsp Potato starch (for dusting)
Oil for shallow frying
Salt to taste
