today, I'll show you how to make my creamy eggplant soup, inspired by my favorite dish, Baba Ganoush. This soup is easy to make and is bursting with flavors of roasted eggplants, enhanced with a nutty touch of tahini. Perfect for soup days or whenever you crave something hearty! Ingredients:
(makes 4-6 servings)
- 3 large eggplants
- 1 whole garlic bulb
- 1 can of coconut milk or 200 g double cream + 200 ml water
- 500 ml vegetable broth
- 2 tablespoons tahini
- Salt and pepper to taste
- About 1 teaspoon dried thyme
- Sesame oil, sesame seeds, chili flakes, and parsley for garnish (Optional)
