If you don't live in North America, Canada in particular, you might not know what poutine is. Poutine is cheese curds scattered on chips and slathered in gravy. Apparently it's what Canadians have after a night of drinking. So maybe it's drunk food, or junk food, or street food - it doesn't matter - cheesy chips and gravy is delicious. I've heard poutine being described as Canada's national dish. I don't know if that's true, but I do know that poutine, a simple dish of cheese curds, chips and gravy is a wonderfully comforting thing.
And don't worry if you can't buy fresh, squeaky curds - in this video I show you how easy it is to make cheese curds.
