Chatkhara stick boti:
Ingredients
Chicken boneless ½ kg
Lemon juice 2 tbsp
Chat masala 1 ½ tsp
Ginger garlic paste 1 tbsp
Pomegranate seeds 1 tsp heaped
Salt 1 tsp
Hung curd ½ cup
Crushed red pepper 2 tsp
Allspice 1 tsp
Black pepper 1 tsp
Roasted n crushed cumin 1 tsp
Wooden skewers as required
Coal to smoke
Method
Cut chicken into boneless cubes, marinate with all the given spices for 2 hours, put on wooden skewers and pan fry, lastly give dum of coal, serve with onion and tomato rings.
Chuharay ki chatni:
Ingredients
Dry Date powder 4 tbsp
Vinegar ¼ cup
Black salt ½ tsp
Button red chilies 12
Boiled tomato skin removed 2
Mint 1 bunch
Coriander ½ bunch
Garlic 8-10 cloves whole
Method
Put all the ingredients in a blender and grind to a fine chatni, serve with a chatkhara boti.
Machhli ka salan:
Ingredients
Fish slices ½ kg
Tamarind pulp ½ cup
Turmeric ½ tsp
Coriander powder 2 tbsp
Salt 1 tsp
Toasted & crushed cumin 1 tsp heaped
Curry leaves 10-12
Ginger garlic 1 tbsp
Onion ground 1 cup
Coriander leaves 4 tbsp
Chili powder 2 tsp
Oil ½ cup
Method
Heat oil, add curry leaves with grinded onion, fry for 5 mins, add all the dry spices, ginger garlic and fry well, add tamarind pulp with fish slices and 1 cup water, cover and cook for 15 mins, lastly garnish with coriander leaves.
Shrimp Sliders :
Ingredients:
Shrimp 1packet
Dinner roll 8 – 10
Lettuce leaves 8 – 10
Cheddar cheese half cup
Skewers 12
Salt 1 tsp
Chili garlic sauce 4tbsp
Mayonnaise 4tbsp
Carrot grated ½ cup
Cabbage 1cup
Method:
First fry butterfly shrimps and set aside now Mix together cabbage and carrot .
To Assemble:
Spread mayonnaise and chili garlic sauce Rolls add lettuce leaves,salt and sauce then add Shrimp, cover with buns top with small Skewers.
