Peaches and Cream Slice 🍑

A shortbread biscuit base topped with peach slices and covered with smooth, creamy vanilla custard and then sprinkled with cinnamon? Say no more!

It’s not chocolatey or peanut butter-y but my goodness it’s delicious! 😋

INGREDIENTS
For the Base:
▪️1 1/2 cup Almond Meal
▪️1/2 cup Vegan Butter
▪️1/4 cup Protein Powder (macr0mike - d/c “amb-han”)
▪️Tinned Peaches

For the Custard:
▪️2 cups Coconut Milk
▪️4 tbs Tapioca Flour
▪️1/4 cup Sweetener
▪️2 tsp Vanilla
▪️Cinnamon for topping

METHOD:
1. Preheat oven to 180°.
2. Mix base ingredients together until consistency resembles wet sand and holds together when pushed.
3. Pour into a lined baking tin and push down firmly.
4. Bake for 20 minutes. Set aside to cool completely before adding peaches and custard.
5. Make the custard by whisking ingredients together in a saucepan until combined.
6. Bring to a boil, stirring constantly. Once it reaches boil, bring heat to low and keep stirring until mixture become thick.
7. Lay peach slices on top of the base and pour custard over the top. Sprinkle with cinnamon and put in the fridge for a few hours to set.
