#kochuri is always a deep-fried recipe. Most Bengali people like it. Not only bengali, many vegetarian people also like it. When Kachori is made with #koraishuti then most of the people like it. And when you add #hing on it increases the taste very much. The #koraishutirkochuri as it is called in the Bengali language, is made with green peas stuffing. INGREDIENTS
FOR THE DOUGH
Maida (all-purpose flour) - 2 cup
Salt - ¼ tsp
Sugar - ¼ tsp
Oil - 3 tsp
Water - as required
‍FOR THE FILLING
Green peas - 500g
Green chillies -4 pis
Salt - ¼ tsp
Sugar - ¼ tsp
Oil for fry(as required)
Hing - ½ tsp
Ginger paste - 1 tsp
Cumin powder - ½ tsp

METHOD
First take 2 cup flour in a mixing bowl, add ¼ tsp salt, ¼ tsp sugar, and 3tsp oil. Mix it very well. Then add water(always add a small amount of water in maida not at a time ) and knead for 5 to 7 minutes into a smooth dough. Add one tsp oil over the dough that the moisture does not out, cover and allow the dough to rest for 20 minutes.
Add peas in a mixer jur and add ¼ tsp salt, ¼ tsp sugar, Cumin powder - ½ tsp, ginger paste 1tsp scraping sides and adding a little water, as needed. Make a smooth paste
In a small bowl, combine the ginger, cumin powder, and 1 tbsp water to form a paste. Set aside. When pan is hot, add 1 tsp ghee and then add hing fry for 2 minutes then add this paste and cook until it dries.
Heat oil in a pan. Divide the dough in 1 tsp peas and the filling.
Stuff the dough with the filling as shown in the video.
Oil the rolling pin and surface well. Roll the kochuris with a gentle hand, applying even pressure.
Lower it into hot oil fry it gently press down to allow the kochuris to puff up. Fry both sides evenly until golden. Remove from the oil and serve hot.
