This slow cooker beef stew is super easy to make, wholesome, and one of the most comforting dishes you can feed yourself and family while still being healthy.
The Best Slow Cooker Beef Stew
Preparation time: 15 minutes
Cooking time: 7 ½ hours
Servings: 4-6
Ingredients:
2 pounds stew meat, cut into 1-inch cubes
2 tbsp olive oil
4 tbsp all purpose flour
1 tsp paprika
4 carrots, cut into ½ inch pieces
1 celery stalk, chopped
1 pound potatoes, cut into 1 inch pieces
1 onion, chopped
3 garlic cloves, minced
2 tsp dried thyme
2 bay leafs
3 ½ tbsp tomato paste
3 cups beef stock
2 tbsp parsley
salt, black pepper to taste
For serving:
sour cream (optional)
Directions:
In a slow cooker place the beef, olive oil, onion, garlic, paprika, thyme, 1 teaspoon of salt and ½ teaspoon of black pepper.
Toss to coat.
Add the carrots, celery and potatoes. Mix to combine.
In a bowl mix together 2 ½ cups of beef stock and tomato paste. Pour in the slow cooker and mix well.
Add the bay leaves, cover with a lid and cook for 7 hours on low.
In a bowl whisk together 4 tablespoon of flour and ½ cup of beef stock. Remove the bay leaves. Stir in the mixture into the slow cooker and cook for 30 minutes or until thickened.
Add more salt or black pepper if necessary.
Stir in the parsley.
Serve warm with sour cream if using.
