A Sri Lankan styled Grilled/Seared Seer Fish Steak Recipe
Seer Fish, also known as King Fish is an Oily Mackerel species of fish that is popular in Sri Lanka as it is caught by Professional Sports Anglers during Deep Sea expeditions. Its a popular Grilled recipe since it has only a single large, Center Bone, and is very easy to Eat.
INGREDIENTS:
Seer Fish Slices (1 inch Thick) 250-500 grams Each Slice
SALSA
Onion (Red or White): 1/2 x Medium
Tomato: 1 x Medium sized
Parsley 5 grams
Lime 1 x medium
Balsamic Vinegar (Optional) 30ml
SEER FISH MARINADE
Ginger (Fresh or Paste): 5 grams approx
Black Pepper 1/2 Teaspoon
Paprika or Cayenne Pepper: 1 Teaspoon
Salt: 1 Teaspoon
Lime Juice (Fresh) 50ml
Garam Masala Powder 3 to 4 Teaspoons
Olive Oil (or Neutral oil) 30ml
Turmeric 1/2 Teaspoon
TIPS: Use High Heat on the Frying Pan or the Grill Pan. Don't over cook the Fish, Seer Fish should be Fresh, and thus does not have that 'Fishy' smell.
One alternative is to only cook the Seer fish without marinading, but just with a little Oil, Salt, and Pepper, then after cooking add the marinated to the fish afterwards. This results in the fish looking better visually since the marinade does not burn as much in the pan.
Instead of Lime Juice, you can use Balsamic vinegar for the Salsa.
