Sorry about the title, this is not Instant Pot. This is cooked over the stovetop.
~CHICKEN DETOX SOUP~
Ingredients
2 tbsp olive oil, divided
1 pound chicken breasts, cut into 1-inch chunks
Salt
Pepper
1 onion, diced
2 carrots, peeled and diced
2 stalks celery, diced
4 cloves garlic, minced
16 ounces mushrooms, sliced
1/2 tsp dried thyme
1/2 tsp dried oregano
8 cups chicken stock
2 bay leaves
1/2 cup orzo, uncooked
1 tbsp dried or 1 sprig Rosemary
1 bunch kale, chopped
1 (15-ounce) can cannellini beans, drained and rinsed
2 tbsp dried or fresh be parsley
Salt and pepper the chicken. Over medium-high heat, brown the chicken with 1 tbsp oil for 3 mins. Take the chicken out when finished.
Add 1 tbsp oil, onions, carrots, and celery, cook for 3 mins. Add garlic, mushrooms, and cook for 5 mins. Add thyme, oregano, bay leaves, chicken stock, and bring it to a boil. Then add rosemary, orzo, and chicken, cook for 10 mins. At the end, add beans, parsley, and kale, cook for a few mins.
