This keto // Low carb lemon pound cake is moist, has a tender crumb, and is delicious with a cup of coffee or afternoon tea to start your day.
Yields 12 slices baked in a 9" or 23cm loaf pan
INGREDIENTS
½ cup (115g) unsalted butter, softened
1 cup (200g) granulated erythritol
4 large eggs, room temperature
½ cup (120mL) fresh lemon juice
⅓ cup (80mL) water
3 ½ cups (350g) blanched almond flour
¼ cup (30g) coconut flour
1 tablespoon (14g) baking powder
½ teaspoon (2g) salt
1 Tablespoon (14g) lemon zest
Bake at 325F or 163C for 50-55 minutes
