4 egg yolks
1 tsp vanilla
75g sugar(1/3 cups)
1/2 tsp salt
16g cornstarch(2 tbsp)
18g flour(2tbsp)
20g butter(2tbsp)
for the bread dough
350g bread flour(21/2cups)
230ml lukewarm milk(1cup+2tbsp)
40-50g butter(4tbsp)
6g yeast(2tsp)
5g salt(3/4tsp)
30g sugar(2tbsp
for the swirl
you can use the custard for the swirl if you like a soft crust. if you use flour like I did the swirls will be crispy and chewy.
2tbsp cornstarch
1tbsp flour
1tsp sugar
water to make a paste
