Chaltar Achar is a most popular Bengali Pickle. It will remind us our childhood and school life. It made by Chalta or Elephant Apple, Date Palm Jaggery and other spices. I made this Achar recipe without using Food color because food colors are not healthy but the taste will be same.
Ingredients:
Chalta / Elephant Apple - 2 Pieces
Dry Red Chilli - 5 Pieces
Date Palm Jaggery - 250 gm
Coriander Seeds - 2 tea spoon
Panch Phoron - 1/2 tea spoon
Cumin Seeds - 1 tea spoon
Fennel Seeds - 2 tea spoon
Salt - As per taste
Sugar - As per taste
Mustard Oil
Methods of how to make Chaltar Achar:
1. At first to make the pickle masala add 5 dry chillies as per taste in a kadai.
2. Roast it little bit then turn the flame to low and add fennel seeds, whole cumin and whole coriander. Roast them for 1 minute on low flame.
3. After roasting grind them in a blender to make the masala powder.
4. Start boiling water in a kadai.
5. When the water starts boiling add the elephant apple,1/2 tsp salt then cover and boil for just 5 mins on high flame.
6. After 5 mins turn off your oven and strain out the water.
7. Now crush the boiled elephant apples so the masala get inside.
8. Then heat up a kadai and add 3 tbsp. mustard oil.
9. Add 1/2 tsp panch foron, 2 tsp sugar.
10. After the sugar melts add the elephant apples.
11. Right now add 250 gm jaggery, 1/2 cup water.
12. Turn the flame to high and add 1/4 tsp salt.
13. Stir continuously and cook on high flame.
14. After 10 mins it's a lot dry now but it will be completely dry.
15. Add 4 tsp pickle masala now.
16. Now turn off your oven.
17. Our today's recipe Chaltar Achar is ready.
