Songpyeon is Korean Half-moon Shaped Rice Cake, the symbol of Chuseok (Korean Thanksgiving). It’s usually made with special frozen rice flour, but it’s not always easy to get. This recipe requires no rice flour. As long as you have some regular Calrose/Korean/Japanese rice (not sweet rice), you can easily make this Songpyeon at home! Bonus: you can also make plain rice cake, Garaetteok used for Tteokbokki or Tteok-guk with this recipe!

** Ingredients **
* For Songpyeon Dough
1 cup Dry Calrose/Korean/Japanese rice (soak for 7-8 hours)
1/2 cup + 1/2 Tbsp water
1/4 tsp Salt
* For Songpyeon Fillings (Be creative!)
2 Tbsp ground toasted sesame seeds + 1 Tbsp sugar + 1 Tbsp maple syrup + pinch of salt
3 Tbsp canned chickpeas (well-drained) + 1 Tbsp sugar
Some peanut butter + crushed peanuts
* For Finishing Touch: Water (optional, but recommended) + 1 Tbsp Sesame oil
* For Garaetteok (Tteokbokki-tteok)

⭐️ Notes ⭐️
1. If you want to make a bigger batch, increase the microwaving time until there is no more liquid (you’re basically cooking it)
2. For the dough (using 1 cup of dry rice - soaked):
Add 1/2 cup of water - very chewy and firm Songpyeon
Add 1/2 cup + 1/2 Tbsp water (just as this recipe) - chewy and moist Songpyeon
Add 1/2 cup + 1 Tbsp water - less chewy and very moist Songpyeon
3. For fillings: whatever you choose to use, keep it pasty and not too runny, otherwise it’ll be a pain to seal off the dough (** if you want sugar to completely melt, you can double the steaming time)
4. If you make thicker Garaetteok for Tteok-guk, you should slice it after refrigerating for a few hours or wait until it gets hardened enough to slice
5. When you cook with Garetteok, make sure to reduce your cooking time as the rice cake will get softened quicker than the store bought ones, which usually contain wheat flour/tapioca flour/potato starch, etc to make firmer texture
6. When you blend the rice, make sure the rice grains are well blended before putting in the microwave.
