FLUFFY QUINOA
Ingredients:
- 1 cup quinoa
- 2 cups water (or vegetable stock)
Method:
1) Give the quinoa a quick rinse and drain the water.
2) Place the rinsed quinoa in a medium sized saucepan with the water. Cover the pot and place it on the stove. Set the timer for 15 minutes.
3) Bring the quinoa to a boil over medium heat (should take about 5 minutes).
4) Once boiling, turn it down to the lowest heat and let the quinoa simmer for the remaining time, covered.
5) Once it's done, turn the heat off and let the quinoa rest in the pot, covered, to steam for another 5 minutes.
6) After the 5 minutes, take the lid off and fluff the quinoa with a fork to stop it from cooking. Serve immediately or store for up to 3 days in the fridge.
