If you have ever visited Peru or a Peruvian Restaurant, chances are you tried that marvelous shredded chicken dish with a creamy yellow sauce, served over white rice, boiled yellow potatoes, hard eggs and black olives. That delicious traditional Peruvian dish is called Ají de Gallina.
In this video, you will learn how to make your own authentic Ají de Gallina (Peruvian Spicy Creamy Chicken) in 5 easy steps.
Ingredients:
1 whole chicken (traditionally this dish was made with hen, but you can use chicken instead)
1 onion, chopped
½ cup grated Parmesan cheese
½ cup of pecans, finely chopped

2 cups of White bread
Minced garlic
Cumin
Rice
Eggs
Potatoes
Black olives
Parsley for garnish
Lettuce
Step 1: Boil & shred the chicken: This step takes a while, so make sure to complete this step in advance. Place the chicken in a large pot filled with water, and boil the until chicken is cooked. Remove chicken and place in a bowl until it is cool enough to shred by hand. Shred the meat into bite sized pieces. Discard skin, bones and fat. Strain the broth and save for later.
Step 2: Prep rice, potatoes and eggs: While you are prepping the chicken, prepare 2 cups of white rice, boiled potatoes and hard boiled eggs to accompany the meal. Potatoes should be peeled and cut in slices. Remove the shell from hard boiled eggs and cut in slices.
Step 3: The Saute: Soak the bread in the chicken stock and then blend to a paste. In a large skillet, saute chopped onions over medium heat until soft and golden, about 10 minutes. Then add 1 tablespoon of minced garlic and 1 teaspoon of cumin and saute for a minute. Add softened bread and 1 tablespoon of Ají Amarillo paste, while stirring. Add chicken stock to keep the sauce from burning and continue cooking as the sauce thickens.
Step 4: Finish the Sauce: Add the chicken and simmer just long enough to warm the meat in the sauce. Stir in the pecans and Parmesan cheese, and simmer gently until thickened slightly. Add salt and pepper to taste.
Step 5: Arrange and serve: To serve, transfer chicken and sauce onto a serving platter in a bed of sliced potatoes. Arrange the eggs and olives on top. Sprinkle chopped parsley, pepper and extra Parmesan cheese. Have rice and lettuce on the side.
