You will need - 4 eggs, 225g Self Raising Flour, 225g White sugar, 225g Butter/marg, pinch salt, 1/4 tsp baking powder, 2 large lemons, 50g Caster (superfine) sugar, 80ml milk
Tips: to make this cake more with a stronger lemon flavour, add 1 tablespoon of a quality lemon extract when adding the eggs/flour.
You may also wish to have a crunchier topping on the loaf - if so use 100g granulated sugar instead of 50g caster sugar
This cake will keep for up to 4 days in an air tight container or wrapped tightly in plastic wrap/cling film.
Don't refrigerate a cake unless you have to - it means the cake won't keep as long.
