my goal is to share the beauty of authentic Persian food recipes and now is KOOBIDEH time
the most popular kabob in my country . delicious with an easy recipe that you can make almost anywhere at anytime,. just need :
FRESH ground meat (preferably lamb flank) some like 50%50% lamb and beef for better integrity but if you want a soft and juicy koobideh experience just go with lamb flank.
one egg for all the skewers you saw on the video for a better paste
ground onion ( make sure to drain them as good as possible cause remember the key to have your kabob stay on the skewer and not fall of is to make it as dry as possible)
salt , pepper ,SUMAC( you should be able to find it in you local Persian food stores which give that authentic sour taste to the meat also you can use it as seasoning on your koobideh after serving )
Knead and massage the meat and onion mixture as much as you can then keep it in the fridge preferably over night , I just left it there for 3 hours and it turned out pretty good .
put them on the skewers then grill and ENJOY!
