사실 단감장아찌는 한국 사람들도 잘 모르는 순한 맛의 옛날 음식이에요
Sweet persimmon pickle is a traditional food that many Koreans find unfamiliar.

약간 달콤하고 아삭한 맛
It’s sweet, mild and munchy

단감장아찌 무침
조각김에 옥수수 잡곡밥 올리고
단감 장아찌 무침 올려 돌돌돌 말아
빈속에 학교가는 아이들 입에 쏙쏙 넣어주기 좋아요

스트레스 받는 날 짜고 매운 라면이 먹고 싶을 때
단감장아찌가 있으면 좋아요
짠맛 라면에 순한 단감 장아찌 좋아요

Sweet persimmon pickle goes well with everything.

Make a wrap of gim(dried laver) with some rice and seasoned sweet persimmon,
It’s a quick and easy food to eat when you are busy.
When you are craving for a spicy ramen,
a sweet persimmon pickle will be a perfect garnish with a mild taste.

소금
물
마늘
쪽파
설탕
볶은 통깨
감식초(일반 식초)

Ingredients
Sweet Persimmon
Salt
Water
Garlic
Chives
Sugar
Roasted Sesame Seeds
Persimmon Vinegar(or normal vinegar)

감이 익어가는 지난 10월의 가을 텃밭에서
약간 덜 익은 단감을 한 소쿠리 따는 주말농부
초록빛이 남아있는 덜 익은 단단한 단감
꼭지를 따고 깨끗이 씻어 물기를 말렸어요

Last October when the persimmons ripen,
Weekend farmers picked some green persimmons.
I removed the stems and cleaned the hard green sweet persimmons.

소금물 준비
소금물 농도: 물에 달걀을 띄워 500원 동전 만큼 떠오르면 OK!(된장 담글 때의 비율과 동일)
소독한 유리병에 차곡차곡 감을 담고
소금물을 부어 3개월 삭힙니다

Salt Water
If the egg floats, it’s the right concentration.
Put the persimmons and the salt water into the sterilized jar and let it sit for 3 month.

Slow slow 숙성의 시간이 조용히 흐르고 있어요
It’s ripening slowly

3개월 후
삭힌 단감을 꺼내볼까요
3 month later, lets take out the pickled sweet persimmons.

단단한 느낌 색깔도 고와요

Persimmons still have the beautiful color and hard texture

꼭지를 따고
껍질을 깎아주기
잘게 채썰기
물을 한 컵 부어줍니다

Remove the stem and leaves
Peel off
Julienne the persimmons
Pour 1 cup of water

1시간 정도 소금기를 빼준 후
And let it sit for 1 hour to drain the salt out

소스에 버무려 먹기 좋게 단감장아찌 무침 만들기
Let’s make a Seasoned Sweet Persimmon

채친 단감 장아찌의 물기를 꼬옥 짜놓아요
유리 볼에 채썰은 단감을 담고
감식초(일반 식초), 쪽파, 마늘, 설탕, 볶은 통깨를 준비해요

Squeeze the water from the sweet persimmon pickle slices
Put the slices into the bowl
Prepare some persimmon vinegar(or a normal vinegar), chives, garlic, sugar and roasted sesame seeds

쪽파 쫑쫑쫑 썰고
마늘 다지기
먼저 칼등으로 마늘을 다지고 칼날로 한번 더 다져 주고

Chop up the chives and garlic
It’s easier to beat the garlics with the false edge of your knife first

감식초(일반 식초도 좋아요)
설탕
볶은 통깨

Pour in some vinegar, salt and roasted sesame seeds

조물 조물 조물 골고루 무침
간이 골고루 스며들게 다독다독

Gently mix the ingredients so the sweet persimmon pickles will be well seasoned

어느 봄날 단감장아찌 몇 개 꺼내
쫑쫑쫑 썰어 놓고
오징어 한 마리 데쳐 썰고
향긋한 봄 나물도 씻어 놓고
소면 삶아 찬물에 헹궈놓고
매콤한 양념장을 만들어
조물조물 버무린 봄나물 비빔국수
삶은 달걀 얹어 만든
단감 장아찌 들어간 봄나물 비빔 국수는 최고의 봄맛이었습니다

One spring day,
I sliced some sweet persimmon pickles,
Prepared some slices of blanched squid,
spring greens,
noodles,
spicy sauce,
And boiled eggs
To mix it all up to make a spicy noodle

Spicy noodles with sweet persimmon pickles were so fresh.
It was the the best taste of spring.
