This No bake Mosaic Fruit Cake is not only beautiful to look at, but super easy to prepare.
There are different variations of the recipe but, most of the time, the cake filling is made using whipped cream set with gelatin and mixed with fruit pieces (pineapple, oranges, mandarins, kiwi and others).
INGREDIENTS:
-56 lady fingers (or plus if needed)
-1 can of pineapple chunks (350 g) – save the pineapple juice to moist the lady fingers
-fruits, fresh or canned, cuted into small cubes
Cream:
-500 ml whipping cream
-250 g mascarpone cheese
-5 eggs
-100 g sugar
-2 tsp vanilla extract
-18 g gelatine, softened in 100 ml cold water
To decorate:
-fruits, cuted into triangles slices, cubes, etc (use fresh fruits or fruits in sirup: orange, kiwi , papaya, mango, jackfruit, apple, pineapple, cherry, etc)
-100 ml cold water/ syrup
-5 g gelatine softened in 50 ml of cold water
-2 tsp lemon or orange extract
-3 tbsp sugar
I used a rectangular springform baking pan with removable bottom, 14" x 9" x 3", but you can also use a round one if you like.
