INGREDIENTS
4 - 5 medium potatoes (Red or Yukon gold) Scrubbed thoroughly*
Salt for boiling water
12 strips of bacon cooked and diced
Bell peppers of different colors, diced
Onion, diced
2 tbsps butter
2 tsps oil (add more if necessary)
1 tbsp butter for the eggs
4 - 5 eggs
1/2 cup - 1 shredded cheddar cheese
1/2 cup Shredded Mozzarella
Salt and black pepper
Paprika
onion powder
green onions
*Make this dish even easier by using chunky leftover French fries diced into 1/2 pieces😉
