This is LENTIL CURRY is creamy, delicious and bursting with flavours. Ideal for lunch and dinner, it can be eaten alone or with rice, bread or cheese quesadilla like I did. You can prepare it in large quantity and store in the freezer.
Ingredients
2 cups Red Lentils
400g Cherry tomato
400ml Coconut milk
5 tablespoon Coconut oil
2 Stockcube
2 teaspoon Coriander powder
2 teaspoon Curry powder
1 teaspoon Ginger powder
1 teaspoon Garam Masala
1 teaspoon Smoked Paprika
1 teaspoon Chilli flakes
1 teaspoon Black pepper
1/2 teaspoon Garlic powder
1/2 teaspoon Tumeric powder
1/2 teaspoon Salt
Direction
Add Coconut oil and all dry spices except black pepper, salt and stock cube
Add tomato and cook for 5 mins on medium heat
Rinse lentils until water is clear
Add lentils and 450ml water
Cook for 10mins on low heat
Add coconut milk, 450ml water, stock cube and black pepper
Cook for 35mins on low heat
Blend until smooth
