Veg Sushi! When we combine the word vegetarian with sushi, one question pops up - is veg sushi so much as even a thing? Well as it turns out, it very much is. An absolute flavour trip bursting with freshness, veg sushi is a version of the dish you can easily make at home. So, follow Chef Harsh Garg as he whips up a storm in his kitchen today!

Ingredients required to make Veg Sushi:

1/2 cup short-grain white rice

1/2 cup water

1 tbsp rice vinegar

1 tsp caster sugar

1/2 tsp salt

1 nori sheet, halved

1/2 cucumber, deseeded and cut into matchsticks

1/2 carrot, cut into matchsticks

1 avocado, thinly sliced

1 head romaine lettuce leaves picked

1 tsp wasabi paste

1 tbsp pickled ginger

3 tbsp soy sauce


How to make Veg Sushi:
1) Combine rice and water in a pot and bring it to a boil. Once boiling turn down the heat to very low. Cover and simmer until the water is absorbed, about 10-15 minutes. Remove from heat and let it stand, covered, for 10 minutes.

2) While the rice is cooking, mix rice vinegar, sugar, and salt in a bowl and stir until sugar is dissolved.

3) Fluff the rice and empty it into a large bowl or platter. Mix in the vinegar solution and stir it to make sure all the rice is coated. Spread the rice onto a platter and fan it to cool it down.

4) Place a sheet of nori on the sushi mat. Take about ½ cup of cooked rice and place it on the nori. Press it into place to all the corners of the nori sheet.

5) Now place the vegetables on it in a line. Let some of the vegetables stick out of the ends.

6) Roll the sushi into a tight roll and then slice into 6 or 8 pieces.

7) Serve with wasabi, pickled ginger, and soy sauce.
