The upside down panelling method is the process of covering a round cake with fondant in sections. Staring with the top then flip the cake to cover the sides then cut away the excess fondant creating very sharp edges. This method is my preferred method because I get a very sharp edge and I don't have to deal with elephant skin and loads of air pockets under my fondant.
