Lotus root is a great choice of vegetables stirfry if you like something crunchy. Usually, lotus root is stir-fried together with other crunchy vegetables like celery and carrot. This is a great vegetarian dish which is full of colors and nutrition.
Ingredients:
A plate-sized of vegetables
- 1 part of lotus root (sliced)
- 1 part of sweet pea (removed ends)
- 1/2 part of carrot (sliced)
- 1 part of celery (peeled and sliced)
- 1 part of black fungus / earwood mushroom (rehydrated and torn into pieces)
6-7 cloves garlic (sliced)
2 tbsp cashew nut
Sauce:
- 1 tsp oyster sauce
- 1/2 tsp salt
- 1/2 tsp sugar
- 1 tsp corn flour
- 100ml water
