Friends, this coconut rice recipe will take your plain white rice recipe to flavor zone! You’ll find this recipe useful in the creative presentations of several dishes coming up soon, so stay tuned!

Ingredients:

* 1 cup of long grain rice (I used basmati rice)
* 1 thinly slice shallot onion
* 2 tablespoons of virgin coconut oil
* 1 cup of coconut milk
* 1/2 cup water
* salt and black pepper (I used 1/2 teaspoon of salt and 1/4 teaspoon of crushed black pepper)
