Medu vada is one of the popular South Indian Food served for breakfast as a companion and also as an evening snack recipe. Medu means soft in tamil and kannada language, literally this is a soft vada with crispness outside.
Crispy Medu Vada recipe is an easy and a simple recipe which can be prepared with less ingredients readily available at home. All that matters is the right consistency of the batter. The soaked urad dal has to be grinded to a fluffy batter by adding correct amount of water. Too much or too less of water should be avoided. I have shown how to grind vada batter in wet grinder in detail so that even the beginners can understand and can make a perfect vada.
Medu vadai is a fritters made from soaked and grinded lentils. This South Indian Vada is also popularly known in other names as Garelu in Telugu, Uddina in kannada or Ulundu vadai in tamil, Batuk in Nepali, and uzhunnu vada in malayalam.
This hotel style medu vada wihich is crispy outside and soft inside is very yummy to taste especially when it is hot. It is a tradition South Indian recipe which are often prepared as a evening snack recipe. Medu vada is also made during festivals and is one of the popular dish included in tamil new year recipes, Pongal special vada recipes, Sankranti vada recipe, Diwali recipes, krishna Jayanthi special recipe, Vinayaka Chatutthi special recipe, Navratri recipe, varalakshmi vratam recipe, etc.
Ulundu vadai recipe is also a popular South Indian breakfast recipe as perfect companion to have along with idli, pongal and dosa varieties.

INGREDIENTS FOR MEDU VADA RECIPE:
* Urad dal / black gram - 1cup (250 g)
* Onion - 2 (chopped)
* Green chillies - 2(finely chopped)
* Ginger - 1tsp (finely chopped)
* Asafoetida - 2 pinch
* Curry leaves - few (chopped)
* Coriander leaves - few (chopped)
* Salt - to taste
* Water - as needed (approx- 200ml)
* Oil - for deep frying
YIELD : 20-25 Vadas
