Chatpati Biryani
Ingredients
Mutton 750 gm boiled in 1 cup water
Green cardamoms 4
Black cardamoms 1
Anistar 1
Grind all the above ingredients together
Other Ingredients
Brown onion 1 cup
Plums 12
Coriander leaves 4 tbsp
Green chilies 8 whole
Mint leaves 20
Ginger garlic 2 tbsp
Chili powder 3tsp
Salt 1 ½ tsp heaped
Turmeric ½ tsp
Yogurt 1 cup
Black pepper ½ tsp
Black cumin ½ tsp
Bay leaf 1
Tomatoes 3 sliced
Screwpine essence 1 tbsp
Saffron essence ¼ tsp
Oil 1 cup
Rice 750 gm boiled with 2 tbsp salt heaped
METHOD
Boil mutton in 2 cups water till half done, then add tomatoes and chopped hara masala. Heat oil, add grinded masala with brown onion and boiled mutton, fry, add all the masala with yogurt, fry well, cover and leave till mutton tender, and cook till oil comes on top, put boiled rice over masala with kewra and saffron essence, leave it on dum, you can add fried potatoes. Serve.

Chicken Roast Masala
Ingredients for Marination
Chicken 1 kg (12 pcs)
Yogurt 1 cup
Chili powder 1 ½ tsp
Turmeric ½ tsp
Salt 1 tsp
Vinegar 2 tbsp
Ginger garlic 1 tbsp
Ingredients for Roasted and Grounded Masala
Cayenne peppers (roasted and grinded) 8
Coriander and seeds (roasted and grinded) 2 tsp
Cumin seeds (roasted and grinded) 1 tsp
Dried fenugreek leaves (roasted and grinded) 1 tsp
Desiccated coconut (roasted and grinded) 2 tbsp
Cinnamon (roasted and grinded) 1 stick
Green cardamoms (roasted and grinded) 4
Black cardamom (roasted and grinded) 1
Black pepper (roasted and grinded) 6
Cloves (roasted and grinded) 3
Ingredients to Fry
Clarified butter ½ cup
Curry leaves 15
Tamarind paste 4 tbsp
Onion fried ½ cup
Sugar 3 tbsp
Salt ½ tsp
Boiled rice to garnish
METHOD
Roast cayenne pepper then roast all the given ingredients, grind the red chili with water. Marinate chicken with all masala and grinded masalas, Kashmiri chili, leave it for 4 hours. Heat clarified butter, add curry leaves and marinated chicken, cook for 10 mins, then add brown onion, tamarind pulp, sugar, salt, leave it to cook on low flame till chicken tender, serve with boiled eggs, French fries and roti.

Baked Kabab Loaf
Ingredients
Chicken mince ½ kg
Behari kabab masala 3 tbsp
Black pepper crushed ½ tsp
Red pepper crushed 1 tsp
Green chilies chopped 4 small ones
Coriander leaves finely chopped 2 tbsp
Chopped mint leaves 2 tbsp
Yogurt 4 tbsp
Cream ½ cup
Ketchup 3 tbsp
Roasted & ground cumin 1 tsp
Cheddar cheese 4 tbsp
Chicken powder 2 tsp
Brown onion grounded ½ cup
Melted butter ¼ cup
Ginger garlic 1 tbsp heaped
Salt 1 tsp
Chili powder 1 tsp
METHOD
Take a loaf pan or oval shape pyrex dish, grease well, marinate mince with all above ingredients, 2 tbsp cheddar cheese, leave for 2 hours. Put in a dish, sprinkle with remaining cheddar cheese, bake on 180 D for 25 mins, serve with nan, kachoomber and raita.
