This recipe is so easy...here's the process!
1. Rinse off your pumpkins
2. Chop off the stems and quarter
3. Scoop out the seeds and stringy flesh
4. Place seeds in a bowl of hot water if you plan to bake
5. Place the quartered pumpkin pieces flesh side up on a cookie sheet
6. Liberally coat with butter, sprinkle with cinnamon, sugar & allspice
7. Bake in 350 degree oven for about 35 minutes or until tender
8. Set aside for a couple of minutes
9. Scoop the tender flesh out of sking and into a bowl
10. Add a quarter cup of almond milk, 1 tsp. cinnamon, and 1 tsp. allspice, and more sugar as needed to your liking
11. Puree in blender
This is a very easy step by step recipe. Once you're finished just follow any homemade pumpkin pie recipe. Just remember that you have already spiced your filling so you may forego adding the sugar and spices from the recipe you use since you've already done that part.
Keep in mind that this pie filling can be frozen and thawed for future use.
