Ingredients
4-5 green chillies, finely chopped
2 tbsps finely chopped garlic
Ready-made parantha dough made using 1 cup whole wheat flour
2 tbsps chopped fresh coriander leaves
1 tsp red chilli flakes
Crushed black peppercorns to taste
1 tsp dried mango powder
¼ tsp turmeric powder
Salt to taste
Whole wheat flour for dusting
Ghee for applying
Green chutney to serve
Salad to serve
Method
1. Take garlic in a bowl, add green chllies, coriander leaves, red chilli flakes, crushed black peppercorns, dried mango powder, turmeric powder and salt and mix well.
2. To make the parantha, take a portion of the dough and shape it into a ball. Gently flatten and dust it with some flour and roll out the dough ball into a thin disc. Apply some ghee, dust some flour on top, sprinkle a portion of the garlic-chili mixture and spread it evenly. Make a cut from the centre to one side, start rolling from one end of the cut to the other to make a cone. Press it and set aside for 5 minutes.
3. Dust the prepared dough portion with some flour and roll it into a disc of medium thickness. This is the parantha.
4. Heat a non-stick tawa, place the parantha and cook for 1-2 minutes. Flip, apply some ghee and cook the other side for 1-2 minutes as well. Flip the parantha and apply some ghee on the other side.
5. Place the parantha on the worktop and crush it to reveal the layers.
6. Serve hot with green chutney and salad.
