The Masterbuilt smoker build was so easy, just follow the instructions and you'll be fine! However, if you aren't much of a reader like us and you prefer to watch a video. Then this is for you!
I couldn't let Luke just tease us all with the beef cheeks, so i've stolen the recipe from him to share with you all. You don't need the Masterbuilt to follow this, however the Masterbuilt Smoker made very easy work of the beef cheeks! With the Masterbuilt, it's pretty much set and forget! EASY!
Recipe and Method below for the "Crying Tiger" beef cheeks below!
Rub:
1 tablespoon of salt, black pepper, white pepper and 5 spice
The Masterstock/Braising liquid:
- 2 litres salt reduced chicken stock
- 1 cup soy sauce
- 1/2 cup coconut sugar
- 2 inch ginger sliced
- 3 cinnamon quills
- 4 star anise
- 8 cloves
Method: Place all masterstock ingredients into a large saucepan and bring to the boil whilst stirring to infuse together.
Glaze:
- 1 cup caster sugar
- 1/2 cup water to break the carabel
- Tablespoon of sambal fresh chilli paste (optional if you don't like chilli, or just put less in)
- 1/4 cup fish sauce
- 1/4 cup rice wine vinegar
- 1/2 cup tamarind paste salt
Beef cheek method:
Smoke at 275F for 3 hours, we used cherry and bourbon barrel smoking wood from Natural Smoke. Once happy with the colour and bark, then you want to transfer into a tray with the masterstock. Cover the tray in foil and place back in smoker for a further 3 hours or until probing extremely tender around the 210F internal mark.
Then these cheeks were rested, pulled and served in some bao with finely sliced lemongrass heart, shredded kaffir lime leaf, fresh lime wedges, thai basil and coriander!
You can do so much with the beef cheeks, the meat is perfect on it's own, or you could also turn them into tacos, pies or anything else you like!
We highly suggest looking into the Masterbuilt smoker. They are a readlly great concept, the full ease of use as a pellet smoker, but they use real wood/charcoal!
