IMO beak trimming can be an important practice in keeping a happy healthy flock.
Whether it is an overbite or underbite it helps the bird if they line up. I believe the ideal is to have a slight overbite because the top beak is thicker and grows faster.
I didn't show trimming on an overbite, but if the top beak starts to hook downward past the bottom then you want to nip it back as well.
