Bacon adds a savory spin to classic French toast that will leave everyone wanting more.
Ingredients
8 slices bacon
4 large eggs
½ cup low-fat milk
8 slices whole wheat bread
2 tbsp maple syrup
Heat a large, dry skillet over medium heat. Cook the bacon, flipping halfway through, for about 5 min., or until golden brown and crispy. Remove bacon from pan and lay on a paper towel to dry, but DO NOT discard bacon grease in pan.
In a bowl, whisk together the eggs and milk, seasoning with salt (in moderation) and pepper.
Working in batches, soak bread-slices in egg-mixture, then cook the French toast in the leftover bacon grease for about 3 min. per side, or until golden brown and crispy.
Remove cooked pieces and transfer to a plate; cover with aluminum foil to keep warm.
Arrange French toast and bacon on a platter and drizzle with the maple syrup.
TIP: If your pan dries out before you finish cooking the French toast, add a little extra olive oil.
