You can use this base for most cookies. Change the peanut butter to Almond Butter, any nut butter, even chickpeas. It is easy and you can make as many different cookies as you can imagine.
1 cup of peanut butter, creamy or chunky
3/4 cup of brown sugar
1 egg
1/2 teaspoon baking soda
Mix brown sugar and eggs until creamy
Add peanut butter, mix well
Sprinkle baking soda, mix well
Fold in add-ins 1/2 cup (any chip, chocolate, peanut butter, butterscotch, etc.)
Pecans or nut of choice 1/2 cup
Bake at 350 degrees for 8-10 minutes for Tablespoon sized cookies
18-20 minutes for 1/4 cup sized cookies
