Method.
place the pork in the fridge uncovered for at least 12hrs or longer, this will dry it out
stab with a skewer in about 3mm all over the skin.
slice back into portions and rub in SAR SUI PASTE
into air fryer
top shelf skin down 10 minutes @180 degrees
top shelf skin up 20 minutes @ 200 degrees
bottom shelf skin up 45 minutes to an hour @ 160 degrees
rest for 10 minutes then cut to suit
