4-5 lbs of ribs *sounds* like a lot until you start eating... One large rack of ribs generally weighs ~2 ½ lbs and has two to three servings.
It's just as easy to bake two racks at the same time. Can't go wrong with rib leftovers!
How To Take The Membrane Off of Baby Back Ribs
Pull any fat off the ribs that easily comes off with your fingers (if you can’t pull it off then it supposed to be there!).
Fat and the pork membrane are slippery. Grab a couple paper towels - it will make it easier to grasp the membrane and pull it off.
Make a knife cut through the membrane but not through the meat. It is located on the bony side of pork ribs. The cut gives you a place to grab and pull. Watch the video for help.
Sometimes the butcher does this already. Sometimes the membrane is so thin that's it impossible to get it off.
Don't understand what the membrane is? Skip taking it off, most people and restaurants skip it anyway and it can be pulled off after the ribs are cooked while eating.
The difference between Pork Baby Back Ribs and Pork St. Louis Style Ribs:
Baby back pork ribs are above St. Louis ribs and located near the top of the ribs by the loin / spine. The bones are smaller and more curved compared to St. Louis ribs. St. Louis ribs are located more toward the belly and are flatter and bigger.
Baby back ribs are a little more tender, leaner, and therefore cost more cash than St. Louis ribs. St. Louis ribs have a little more flavor and fat than baby back ribs.

Ingredients List Barbecue Sauce (or buy some)
* 1 ½ cup ketchup
* 1 ½ Tbsp brown sugar
* 1 ½ Tbsp dijon mustard

Instructions
* Preheat oven to 300F and line a baking sheet with aluminum foil for easy clean up.
For the sauce:
* Use a store bought bbq sauce (my fav. by far is Sweet Baby Ray's Original) or combine all the BBQ sauce ingredients above in a pot, bring to a boil, reduce heat to simmer, and cook uncovered ~ 30 minutes or until sauce is reduced. Stir occasionally so it doesn't burn.
For the ribs:
* Pull any fat off the ribs that easily comes off with your fingers (if you can't pull it off then it supposed to be there!). Peel off any tough membrane that is on the bony side of the ribs if it's not done already.
* salt and pepper the ribs
* Cut the ribs into manageable sizes (if needed) that will fit onto a baking sheet.
* Line a baking sheet with two large sheets of aluminum foil for each rack of ribs (enough to cover the ribs).
* Place ribs meat side up (bones down) in the foil and crimp the foil into packets and place on baking sheet. Bake 2 ½ hours or until ribs are tender.
* Uncover ribs (careful - it's hot!), slather with bbq sauce & broil uncovered for 2-4 minutes or until BBQ sauce is boiling and browned.
*Serve with potato salad and corn on the cob and extra barbecue sauce on the side. Add salt to taste. Happy Finger Lickin'! Beckie
