Rice
Mutton - 3 kg Leg Meat
Water - 3L
Butter - 500 g
Chillies - 30 Blended
Green Cardamon - 1 Tablespoon Seeds Only, roughly 20 pods
Salt - 3 Tablespoons
Cinnamon - 4 Sticks
Cloves & Whole Black Pepper - 15 Each
Dry Bay Leaves - 8
Cumin Seeds - 4 Tablespoons
Ground Black Pepper - 1 Tablespoon
Green Cardomom & Cinnamon Powder - 1 Tablespoon Each
Onions - 7 Sliced
Rice - 2 Kg washed
Chutney :
Chillies - 6
Garlic - 7
Green Apple - 1
Coriander - 2 Tablespoons
Milk - 2 Tablespoons
Lemon Juice - 1 Tablespoon
Pomegranate Powder - 1 Tablespoon
Salt - 1 Tablespoon
Mint Sauce - 1 Tablespoon
Fenugreek Leaves - 1 Tablespoon
Plain Yoghurt - 200g
Raita :
Onion - 1 Diced
Medium Tomatoes - 2 Diced
Cucumber - Half, Diced
Salt - 1 Tablespoon
Mint Sauce - 1 Tablespoon
Milk - 3 Tablespoon
Yogurt - 1600g
1. In the pressure cooker add the water (2L) & mutton, boil for 15 minutes
2. Whilst the mutton is boiling, in a separate pot melt butter
3. Once the butter is melted add the onions, salt, green cardamom seeds, dry bay leaves, cinnamon sticks, cloves & whole black pepper, stir these ingredients & cook for 10 minutes
4. Then using sieve separate the mutton from the broth in the pressure cooker & gently place into pot
5. Once the mutton is added to the pot & is stirred in, add the chillies & cook for 20 minutes
6. Ensure to stick after each ingredient is added
7. After that add the washed rice & cook for 5 minutes whilst stirring
8. Then add the broth from the pressure cooker & water (1L) as well as ground black pepper, cumin seeds, green cardamom & cinnamon powder, stir these ingredients in & cook for 5 minutes
9. Stir the rice & then gently place the pot into the preheated oven for 15 minutes on medium heat
Chutney -
1. In a food processor, blend the apple, garlic, coriander, chillies, lemon juice, pomegranate powder, salt & fenugreek leaves for 1 minute
2. If your food processor is small you can blend the ingredients in halves
3. Add 1 tablespoon of yoghurt & the mint sauce to the food processor & blend for 1 minute
4. After that bind the chutney mixture, milk & remaining yoghurt in a bowl using a spoon
Raita -
1. Slightly blend the onions, cucumber & tomatoes in the food processor & then place into a bowl
2. Then add the salt, mint sauce, milk & yoghurt, bind these ingredients together in the bowl using a spoon
As per your taste add more salt or mint sauce.
Serve the rice with the chutney & raita & enjoy!
