This question comes up often in groups and forums: how much pickling lime do i need to waterglass eggs? And some people don't own a scale so they want to know in a method that works for them. So in this short video, we show both methods to answer how much pickling lime you need for long term egg storage. I prefer to make 1 qt at a time so i use a canning jar to measure everything out. Add the eggs to the container and add the water and pickling lime to the container until the eggs are covered. This method allows you to safely store eggs long-term 1 year to 18 or more months depending on the temperature they are kept (a cool dry place with a steady temperature will last longer than a place where the temperature or humidity fluctuates). There have been reports that the Amish feel the eggs are safe even after 3 years of storage (albeit, their storage methods although ancient compared to most people ... have way better temperature regulation than the average homeowner has. So that is the point I am trying to make, how long you can keep eggs greatly depends on the temperature. An unheated basement without direct sunlight or an actual food cellar will be way better than under your kitchen sink in a cabinet)
