Agar is a jelly-like medium filled with nutrients to grow micro-organisms. Mushroom cultivators tend to have a preference for the nutrients that they use in the agar. Different species of mushrooms might need different nutrients to grow optimally.
Agar creates a 2-dimensional surface for growth, making it easier to spot contaminants and select for the best mycelial growth.
Working with agar requires sterile technique, which is why these agar plates are being poured in front of a laminar flow hood.
