This delicious chicken with colorful crunchy onions and peppers will be your new favorite ! 

Recipe -
1 lb.( 500 g )  2 boneless chicken Breasts - cubed into 1-inch pcs
1 -big onion - cut into square chunks 
1 - large green pepper - cut into square chunks 
1 serrano chili - diced finely 
2 - 3 Tbsps soy
1 Tbsp- ground ginger garlic 
1 Tbsp corn flour
1/2 cup water + 1/4 cup
2 Tbsp oil+
Salt to taste - (Keep at minimum as soy sauce has enough)

Method - Marinate cubed chicken in soy sauce, ginger & garlic paste and little salt for 30 minutes.
Heat 1 Tbsp oil in pan on medium heat and fry onion for 2 mins and keep aside. Saute' the  green peppers for 2 mins and keep aside.
In same pan add 1/2- 1 Tbsp oil and saute' serrano, stir for a minute. Turn up heat and add marinated chicken and brown all over for 2 mins. Add water and lower heat to medium - low, cover and cook for 12 mins or till tender. Mix corn flour in 3-4 tbsp water and add to chicken. . Stir and let thicken for about 3 minutes. Check taste. Add 1Tsp oil if required. Combine onions and peppers. Turn up heat. Stir till well combined for 1 to 2 mins . (Do not exceed time as it overcooks the veggies) Keep it tender and crunchy. Serve by itself or with Rice /Noodles/ Pita
