In today's video I'll be showing you how to cook the perfect lamb roast on a rotisserie in a Weber Kettle. The rotisserie for a Weber Kettle is one of my most used accessories.
If you don't have a rotisserie, you can still follow this method, you just wont get the meat basting itself in all of its juices throughout the cook.

INGREDIENTS: - MEAT AND VEGETABLES
Leg of lamb
Potatoes (low starch variety for roasting)
Carrots
2 x onions to make rings to hold carrots
INGREDIENTS: - INCIDENTALS
3-4 tablespoons of Duck Fat for vegetables
Salt and pepper for seasoning vegetables
INGREDIENTS: - PASTE
4 tablespoons of extra virgin Olive Oil
Lemon Juice from half of a large lemon
Lemon Zest from one large lemon
6 x Anchovies
2 tablespoons of fresh Rosemary finely chopped
1 tablespoon fresh Thyme finely chopped
½ tablespoon of Salt Flakes
¼ tablespoon of Black Cracked Pepper
INGREDIENTS: - OUTER SURFACE
3 – 4 cloves of garlic pealed and sliced length ways into quarters
12 -14 small sprigs of rosemary
INGREDIENTS: - GRAVY
3 cups of water
3 onions roughly chopped
2 cups of beef stock
1 cup of white wine
30 grams of unsalted butter
2 tablespoons of plain flour
Salt and pepper to taste.
