On cold raining days, I often crave for one particular Filipino dish, sinigang and hot steamed rice. Sinigang is a quintessential Filipino dish, in the same ranks as adobo. It’s a soup/stew of meat or seafood with a variety of vegetables. Tamarind or guava is often used to make the sour soup base. This soup is akin to the Thai hot and sour soup tom yum but without the “hot” part.

Tamarind Soup Recipe with Pork and Vegetables (Filipino Pork Sinigang Recipe)
Ingredients
2 lbs pork soft bones
8 cups water
½ large onion, diced into large chunks
4 garlic cloves, crushed and peeled
1 packet tamarind seasoning mix
Salt, to taste
2 tbsp fish sauce
2 cups diakon, peeled and sliced
2 jalapeno peppers, trimmed
1 cup green beans, trimmed and cut in 2 in lengths
3 heads bok choy, trimmed
Directions
1. Prepare the onion, garlic, daikon, jalapeno peppers, green beans, and bok choy.
2. Boil water in a large pot over medium-high heat. Once the water starts boiling, add the pork soft bones. Cover and let it return to boil then add the onions and garlic. Cover and simmer for 45-60 minutes over medium-low heat until the meat is tender.
3. Add the sliced daikon and cook for 5 minutes.
4. Add the jalapeno peppers and green beans. Cook for 2 minutes.
5. Add the bok choy and cook until slightly wilted.
6. Serve with hot steamed rice.
Tips
You can use other vegetables like water spinach, watercress, cabbage, eggplant, snake beans.
You do not have to use the whole packet of the tamarind seasoning mix. If you want the soup to be less sour, feel free to use only a fraction of the tamarind seasoning mix.
Fresh tamarind is used traditionally as a souring agent for this dish. The juice of tamarind is extracted by mixing crushed tamarind and water. The tamarind seasoning mix is a more convenient and equally tasty alternative to fresh tamarind. You can find this in most Asian supermarkets.
You can replace pork with beef, fish or shrimp.
