Lamb Leg (Chatkhara Raan Roast) (Episode 11 Eid ul Adha Special)
Lamb leg: 2.2 kgs
Put the deep gashes on lamb leg
Marinate Ingredients:
Yogurt: 1 & 1/2 cup
Kashmiri chilli powder: 1 tbsp
Turmeric: 1 tbsp
Roasted Cumin Seeds: 1 tbsp crushed
Roasted Coriander seeds: 1 tbsp crushed
Salt: 1 tbsp
Chaat masala: 1 tsp
White pepper: 1 tsp
Kachari powder: 1 tbsp
Green chillies paste : 1 tbsp
Chilli Sambal : 1 tbsp
Ginger Garlic paste: 2 tbsp
Lemon juice: 1/4 cup
Mix the ingredients together.
Rub the marinate all over .
And leave to marinate for overnight or atleast 8 hours .
Next day take out of fridge.
On parchment paper add,
2 sliced onions
Halves of garlic bulb
3 bay leaves
1 cinnamon stick
8-10 pcs cloves
3 black cardamoms
6-7 green cardamoms
1 tbsp coriander seeds
Place the marinated lamb leg. Drizzle olive oil.
Wrap in parchment paper and foil.
Place on roasting tray and pour water in bottom tray.
And steam roast for 4 hours at 200 c
After take out from paper and broil for another 20 minutes at 170 c
