The last episode of the bad batch demonstrated how the Empire was busy dismantling and melting down trillions of fully operational battle droids, while simultaneously looking for cheaper alternatives to the clones. So why would Palpatine do this if he had ultimate control over the droid army and could have used it to in conjunction with the clones to crush any disent within the galaxy. Well the first reason was political. Many within the core worlds saw Palpatine as their saviour, while also hating droids for their role in destroying many world's during the clone wars. By using the CIS droids,many of his most loyal and most powerful allies would have questioned his leadership, not something Palpatine wanted to risk in the early days of the empire. What's more, Palpatine was able to use dark side sith techniques to influence organic soliders, further increasing his control over his army while also elevating his own power.
