INGREDIENTS

For basic mayo
1 whole egg
1 egg yolk
350g rape seed oil
1 tsp of sugar
1 tsp of salt
1/3 tsp of white pepper
1 tbsp of light coloured mustard
1 tsp white wine vinegar

Tartare
70g onion
125g pickled cucumbers
70g fresh mushrooms, hats only
125g canned green peas
1 tbsp of creme fraiche
1 tsp of piccant mustard
Pepper

Toppings
Chives
Dill
Parsley

Makes about 900g of Ready Sauce Tartare!
