This VEGAN MOIST CARROT CAKE RECIPE is a combination of great flavors- carrots, banana, sugar, vanilla extract and cinnamon. None of its flavor is overpowering at all. The cake is dense but very moist and soft. We love the taste of the added raisins and walnuts. We added a simple frosting on top of the carrot cake, but even the carrot cake alone taste excellent already!

Note/s:
1. You may replace the banana with applesauce if you like. 1/3 cup will do!
2. For the add-ins, you may remove them if you want. The raisins added sweetness into the cake.
