Ombré Citrus Cake

This gorgeous ombré citrus cake might look elaborate, but it couldn’t be easier to make. Thinly sliced oranges, bathed in orange syrup, are layered in a baking dish, then covered with an insanely moist, flavorful, and easy cake batter. A perfect cake for any day of the week! 😊
Ingredients:
For the Bottom:
3 oranges (different varieties: orange, navel orange, blood orange)
1/3 cup granulated sugar
½ cup water
2 tbsp orange juice
For the Cake Batter:
3 eggs
1 cup/200g granulated sugar
¾ cup/165 ml vegetale oil
¼ cup/60g yoghurt
1 tsp vanilla or orange extract
2 tbsp orange juice
1 tbsp orange zest
1 ¼ cup/165g flour
Instructions:
For the Bottom: With the peel on, slice the oranges horizontally. In a medium saucepan over high heat, heat the sugar, water, and orange juice until it comes to a boil. Place the oranges into the syrup, leaving the blood oranges out. Turn the heat to medium-low and let the slices candy for 10-12 minutes. Turn off the heat.
For the Cake Batter: In a large mixing bowl, combine the eggs and sugar. Add the oil, yoghurt, extract, orange juice, and orange zest and continue to whisk for 30-60 seconds, then add the flour.
Preheat the oven to 175C. Remove the orange slices from the syrup and line the cake pan, arranging by colour. Pour the cake batter over the orange slices. Place into the oven and cook for 30 minutes until lightly browned. Once done, remove from the oven and let cool for 20 minutes. Flip the pan over onto a serving plate, remove the parchment paper, and serve with the remaining syrup. That's it! Enjoy!
