Hi everyone, welcome to the very first video on my channel! As I transition to a more high plant based diet, I started taking on the #meatlessmonday challenge. Basically, it's a practice to eat no meat on mondays as part of an effort to reduce my overall meat consumption in my diet. I've been doing this for almost a month now, so I'm on my third week, and so far so good. It also definitely helps kick starts a week of hopefully healthier eating or just eating more plant based meals and not making meat as the center of every meal.
