Recipes:
✅To prepare the sponge cake:
60 g (2.1 oz) all-purpose flour
20 g (0.7 oz) cocoa powder
3 eggs (total weight without shell 150 g / 5.3 oz)
A pinch of salt
70 g (2.5 oz) sugar
10 g (0.35 oz) vanilla sugar
Beat the mixture until it increases in size by 3-4 times (about 10 minutes).
Line a 27x36 cm (10.6x14.2 in) baking tray with baking paper.
Bake in a preheated oven at 190°C (374°F) for 10 minutes.
Allow to cool.
Trim the edges.
✅For preparing the filling:
350 g (12.3 oz) cream cheese (alternatively ricotta or quark)
100 g (3.5 oz) soft butter
50 g (1.8 oz) powdered sugar
10 g (0.35 oz) vanilla sugar
Mix everything into a homogeneous mass.
150 g (5.3 oz) canned pineapple.
✅For soaking:
80-100 g (2.8-3.5 oz) pineapple syrup.
Place the cake in the fridge for a few hours.
✅For decoration:
Melted white chocolate.
Almond flakes.
