The taco. Here in Mexico, there is no greater comfort food, no other food that brings people together at the end of a long night. No better pick me up than a taco mid-day, when you’re peckish, no easier choice when choice abounds. But, the king of all tacos? The one, when pressed, most Mexicanos admit is their favourite? Tacos Al Pastor.

We’ve been in Taxco for a little over a month, and we’ve found a few favourites.

Welcome to #Tacos El Chino.

Rumour has it that Tacos El Chino is the longest standing #AlPastor joint in the city. Ever since they brought al Pastor here to Taxco forty years ago from #Mexico city, El Chino has been satisfying the late night cravings of hungry Taxquenas.

The taco al pastor is unique among tacos. And, if the vertical spit - the trompo - looks familiar, it’s because the pastor taco gets its heritage from the Lebanese Shawarma.

Up to 30 kilos of pork butt are sliced into thin layers and piled on the trompo to create one large, grease dripping, fat sizzling wonder.

Here at Tacos El Chino, they let the flavour of the pork speak for itself. Impossibly thin slices of meat are sheared off the trompo, and served up with pineapple, onion and cilantro on a tender little tortilla. An al Pastor taco is the perfect two-bite snack.

Tacos Mimi, an Al Pastor tradition for 24 years, doesn’t need a sign outside telling you where to find some tasty tacos. Their sign is the beautiful, abundant trompo, the licks of flame kissing
pork shoulder piled high, the crackling sizzle of scorching fat, and the smell of singeing meat.

Tacos Mimi, like many restaurants here in Mexico, is a family affair, and on busy nights, everyone is recruited to keep the service fast, and the tacos hot.

Mimi, the matriarch of the family, serves up all kinds of tasty Al Pastor treats, but the taco still reigns supreme. Her recipe, like those of every Al Pastor joint worth their trompo, is a well guarded family secret.

And if we’re talking about a place that needs no sign or introduction, these Al Pastor tacos in the heart of the Taxco Mercado can’t be missed. Proudly placed in the middle of a busy thoroughfare, this dynamic duo has been showing up on weekends and special occasions for more than thirty years to fill the bellies of hungry shoppers.

The art of carving an al pastor trompo is lost on us, but we’re told it’s all in the hips.

The heavily marinated trompo is seasoned with guajillos and achiote, the smoky sweet aroma drifts through the tight alleys of the market, luring passersby with its irresistible smell.
